Ingredients

  • approximately 20 g of truffle
  • 12 eggs 
  • A drizzle of neutral oil (sunflower, rapeseed, etc.)
  • Salt
  • Pepper

  • A salad bowl
  • A whip
  • A non-stick pan

Step 1: 

  1. 4-5 days before making the omelette, put the eggs to infuse with the truffles in an airtight jar.

Step 2: 

  1. On omelette day, break the eggs into a salad bowl.
  2. Cut the truffle into small pieces using a knife in the salad bowl.
  3. Salt and pepper.
  4. Stir discreetly: the egg yolks and whites should be lightly mixed together.
  5. Cover and refrigerate for a few hours.

Step 3: 

  1. Heat a drizzle of neutral oil in a non-stick pan.
  2. Once the oil is hot, pour the mixture into the pan.
  3. Stir 2-3 times and let the omelette set.
  4. Fold the omelette on itself and serve.
  5. Sprinkle with truffle shavings.
