Ingredients
- approximately 20 g of truffle
- 12 eggs
- A drizzle of neutral oil (sunflower, rapeseed, etc.)
- Salt
- Pepper
You will also need some
Utensils
- An airtight jar
- A salad bowl
- A whip
- A non-stick pan
Step by step recipe

Step 1:
- 4-5 days before making the omelette, put the eggs to infuse with the truffles in an airtight jar.

Step 2:
- On omelette day, break the eggs into a salad bowl.
- Cut the truffle into small pieces using a knife in the salad bowl.
- Salt and pepper.
- Stir discreetly: the egg yolks and whites should be lightly mixed together.
- Cover and refrigerate for a few hours.

Step 3:
- Heat a drizzle of neutral oil in a non-stick pan.
- Once the oil is hot, pour the mixture into the pan.
- Stir 2-3 times and let the omelette set.
- Fold the omelette on itself and serve.
- Sprinkle with truffle shavings.
